Mango Pudding

Ingredients

mango 3/2 (160 g)
gelatin sheets 6 g
hot water (about 60°C) 160 ml
fine granulated sugar 80 g
evaporated milk 80 g
evaporated milk (for sauce) 30 ml
milk (for sauce) 30 ml
sugar syrup (water:sugar = 1:2) 50 ml

Prepare the mango

Cut the flesh off the mango along the pit, then peel. Cut 60 g into 1 cm cubes, and slice the rest into long strips.

Prepare the gelatin

Soak the gelatin sheets in ice water for about 10 minutes, then squeeze dry. Place them in a mixing bowl, pour in the hot water, and stir to combine. Cool the bowl over ice water.

Make the pudding base

Combine the long mango strips, fine granulated sugar, evaporated milk, and gelatin liquid in a blender and blend until smooth. Pour into a mixing bowl and stir over ice water until thickened, then fold in the mango cubes.

Set the pudding

Spoon the mixture into plastic cups and refrigerate for about 1 hour until set.

Make the sauce

Mix the evaporated milk sauce ingredients together and drizzle over the pudding. Optionally garnish with mango and mint.
