Peach sorbet, prepared for Glace Eden
Ingredients
mineral water
280 g
sugar
200 g
stabilizer SL 66
8 g
spray glucose
100 g
peach puree
1.4 kg

Boil syrup
Boil mineral water, pour over mixture of sugar, stabilizer, and spray glucose. Stir while hot, then refrigerate.

Churn freeze
After ripening for about 24 hours, add peach puree. Stir again before churning.
