Smoked Pork Ribs

Ingredients
Pork ribs (3 connected ribs chopped crosswise into large pieces)
to taste
Five-spice powder
to taste
Salt
to taste
Cooking wine
to taste
Ginger (sliced)
to taste
Scallions (cut into segments)

Fermented rice wine
to taste
Braising liquid
to taste
Smoking material
to taste
Sesame oil

Sichuan peppercorns

Cooked vegetable oil

Step 1
Cut the 3 connected ribs crosswise into large pieces. Add salt, ginger slices, scallion segments, five-spice powder, cooking wine, and Sichuan peppercorns, mix well, and marinate for 20 minutes. Steam until just cooked through, then remove. Place into a pot of braising liquid and heat until the meat falls off the bone, then remove. Deep-fry in hot oil until golden in color and dry in texture, then remove from the pot.

Place the fried ribs in a smoker, ignite the smoking material, and smoke until the ribs turn dark red and absorb the smoky aroma. Remove, brush with sesame oil, chop into small pieces, and arrange on a plate.
