Spicy sesame oil to taste
Sweet soy sauce to taste
Soy sauce to taste
Vinegar to taste

Minced ginger and scallion to taste

1

Step 1

Boil the pork head meat until 80% cooked, then remove and submerge it in cold boiled water. Once cooled, remove the bones, then return the meat to the cold boiled water.

2

Step 2

Before serving, slice the pork head meat into large thin slices (the thinner the better). Submerge the slices in cold boiled water and let them soak for an additional hour.

3

Step 3

Add the sesame paste and spicy sesame oil to a bowl and mix until smooth. Stir in the sweet soy sauce, soy sauce, vinegar, minced garlic, minced ginger and scallion, salt, and MSG until well combined.

Step 4

Drain the meat slices and arrange them on a plate. Sprinkle with sesame seeds and minced cilantro. Pour the prepared sauce evenly over the meat, toss to coat well, let the flavors absorb, then serve.
