Ingredients

beef brisket (washed and cut into chunks) to taste
pickled mustard greens (washed and shredded) to taste
fresh ginger (washed and shredded) to taste
garlic (washed and minced) to taste
red chili (washed and shredded) to taste
onion (washed and shredded) to taste

spice pouch (containing star anise and cassia bark) 1
soy sauce 1 tbsp
spicy fermented chili bean paste 2 tbsp
white sugar 2 tsp
MSG 1 tsp

Instructions

1

Prepare the ingredients

Wash the beef brisket and cut it into chunks. Blanch it in boiling water for about 10 minutes, then remove and rinse it. Wash and shred the pickled mustard greens, then stir-fry them with a pinch of white sugar. Wash and shred the ginger, mince the garlic, and wash and shred the red chili and onion.

2

Braise the beef brisket

Heat the oil in a wok and fry the garlic, ginger, and red chili until fragrant. Add the spicy fermented chili bean paste and soy sauce, and stir-fry briefly. Add the beef brisket and stir-fry until the bean paste becomes fragrant. Pour in 1 large bowl of water, add the spice pouch and the remaining seasonings, bring to a boil, then reduce the heat and simmer for 1 hour.

3

Assemble the bowl

Cook the noodles and blanch the washed oilseed greens in boiling water. Place both in a bowl, add the braised beef brisket and its broth, and top with the shredded pickled mustard greens.
