Spicy Diced Chicken (Mala Zi Ji)

Ingredients

tender young chicken (cleaned, deboned, washed, cut into 1.5 cm cubes) 1 (about 500 g)
large red chili peppers (washed, stems and seeds removed, cut into 1.2 cm cubes) 100 g
peanut oil (for frying the chicken cubes) 1000 g (actually uses about 50 g)
wet cornstarch (15 g used for marinating) 25 g
cooking wine (for marinating) 15 g
garlic (peeled, cut into 1 cm slices) 15 g
MSG 1 g
Sichuan peppercorns (washed, crushed) 2 g
sesame oil (drizzled at the end) 5 g
vinegar 10 g
soy sauce (5 g used for marinating) 20 g
fine salt 1 g

Prepare Ingredients

Clean the tender young chicken by removing all bones, wash, and cut into 1.5 cm cubes. Place in a bowl with 5 g soy sauce, 15 g wet cornstarch, and cooking wine; toss to combine. Wash the red chili peppers, remove stems and seeds, and cut into 1.2 cm cubes. Wash and crush the Sichuan peppercorns. Peel the garlic and cut into 1 cm slices.

Fry the Chicken Cubes

Heat a wok over high heat. Add 1000 g peanut oil and heat to 70% hot. Add the chicken cubes and fry until golden. Remove and drain off the oil. Pour out the remaining oil into an oil container.

Stir-fry and Season

Heat the wok and add 50 g peanut oil. Add the red chili peppers and Sichuan peppercorns with 1 g salt and briefly stir-fry. Immediately add the fried chicken cubes and toss together. Add vinegar, soy sauce, garlic, and MSG. Stir in wet cornstarch to thicken the sauce, toss a few more times, transfer to a serving plate, drizzle with sesame oil, and serve.
