Tomato Sauce Potatoes

Vibrant in color and fresh in flavor, with a subtle sweet-and-sour note, this dish is made by stir-frying mashed potatoes with tomato sauce and minced onion.

Tomato Sauce Potatoes

Ingredients

potatoes 250 g
raw tomatoes (or 50 g tomato paste, peeled and chopped) 150 g
onion (diced) 0.5
vegetable oil 50 g
essential oil 7 g
white sugar a pinch
chili oil a pinch

Instructions

Step 1

Wash the potatoes with their skins on, place them in a pot, add an appropriate amount of water, and cook over heat until done. Then remove, let cool, peel off the skins, and mash into a fine puree; dice the onion.

Peel and chop the tomatoes (or use tomato paste). Heat a small amount of oil in a pan, stir-fry the tomatoes into a sauce, then remove and set aside.

Heat oil in a wok over high heat, add the diced onion and stir-fry briefly, then pour in the tomato sauce and stir-fry until fragrant. Add the chili oil, then add the mashed potatoes and mix well.
