Ingredients

celery stalks 4-5 stalks, cut into 4-5 cm pieces
garlic cloves 2-3, thinly sliced
vegetable oil 2 tablespoons
salt to taste
chicken powder a pinch (optional, for umami)
white pepper a tiny pinch (optional)

Prep the celery

Cut the celery into uniform pieces about 4-5 centimeters long. Wash thoroughly and pat completely dry with a clean kitchen towel—any excess water will cause the vegetables to steam instead of sear.

Bloom the garlic

Heat oil in a wok or large skillet over medium-high heat. Add the sliced garlic and stir-fry for about 30 seconds until fragrant and just starting to turn golden. Watch carefully to prevent burning.

Wok-toss the celery

Add the dried celery to the wok immediately. Season with salt and a small pinch of chicken powder if using. Stir-fry over high heat for 3-4 minutes, tossing constantly, until the celery turns bright green and stays crisp-tender.

For a softer texture, cook an additional 1-2 minutes.
