Curry Country-Style Braised Soybeans

Soybeans are a universally loved ingredient, ideal for quick weeknight dishes and packed with nutrition. I particularly enjoy boiling them whole or simmering them in soups paired with other ingredients: their rich, nutty aroma is deeply appetizing, even more flavorful than meat, with a satisfying, chewy texture that grows more aromatic the longer you chew.

Today’s recipe is Curry Savory Soybeans: adding curry to this classic savory soybean dish creates an entirely new flavor profile, with a rich, bold curry taste that balances sweet and salty notes. It’s so craveable you’ll easily finish an entire bowl of steamed rice alongside it.

Soybeans are widely known as the "king of beans," and are often referred to as "plant-based meat" or the "green dairy cow." Dried soybeans contain roughly 40% high-quality protein, the highest protein content of any staple grain. Many nutrition experts recommend eating soybeans, drinking soy milk, or consuming soy products daily. Processed soy products such as tofu and soy milk are extremely high in protein, and contain all the essential amino acids the human body cannot synthesize on its own, making them ideal nutritional supplements.

Curry Country-Style Braised Soybeans

Ingredients

soybeans 200 g
seafood soy sauce 50 g
white sugar 50 g
curry powder 15 g

Instructions

1

Step 1

Rinse the soybeans thoroughly, then soak them in cold water for at least 2 hours. The soybeans are ready when they swell up and look plump; soaking makes them easier to cook. If you are using a pressure cooker, you can skip the soaking step.

2

Step 2

Add an appropriate amount of water to a pot, put in the soaked soybeans, bring to a boil over high heat, then simmer over low heat.

3

Step 3

Remove the cooked soybeans from the pot and set aside; prepare the other ingredients.

4

Step 4

Add the seafood soy sauce to the pot.

5

Step 5

Add the cooked soybeans and white sugar to the pot.

6

Step 6

Simmer over low heat for about 20 minutes, until no more foam appears on the surface.

7

Step 7

Add the curry powder and continue to simmer over low heat for 3 to 5 minutes.

8

Step 8

Turn off the heat.

9

Step 9

Serve the dish. It looks really appetizing, right? This is curry-flavored country-style braised soybeans. If you don't like the curry flavor, you can omit the curry powder. This homestyle side dish is a regular in my household and tastes delicious.
