Sticky Rice and Yam Soy Milk

Story

This comforting drink is a popular breakfast in eastern China, where soy milk culture runs deep. The sticky rice gives body while the yam adds gentle sweetness and a smooth finish.

Ingredients

dried soybeans 1/2 cup (50g)
glutinous rice 3 tablespoons (30g)
fresh yam small piece, peeled and diced (about 50g)
water 3 cups (720ml)
sugar or honey optional, to taste

Prep the ingredients

Rinse the soybeans and glutinous rice under cold water until the water runs clear. Peel the yam and cut into small cubes.

Load the blender

Add the rinsed soybeans, glutinous rice, and yam cubes into the blender or soy milk maker container.

Add water and blend

Pour in the fresh water. Close the lid and select the soy milk program. Let it run through the full cycle until the machine signals it's done.

Serve warm

Carefully remove the blender (it will be hot). Stir well and pour into mugs. Add a touch of sweetener if desired. Serve immediately while warm.
