Brie and Cherry Pastry Cups

Brie and Cherry Pastry Cups

Ingredients

frozen puff pastry (thawed) 1 sheet (from 17.3-oz package)
red cherry preserves 1/3 to 1/2 cup
Brie cheese (cut into 1/2x1/2-inch pieces (36 pieces)) 4 oz
pecans (chopped) 1/4 cup
fresh chives (chopped) 2 tablespoons

Instructions

Step 1

Preheat the oven to 375°F. Spray 36 mini muffin cups with cooking spray. Cut the puff pastry into 36 (1.5-inch) squares. Gently press each square into a muffin cup; press the center down with your fingers.

Bake for 10 minutes. Use the handle of a wooden spoon to press down the center of each. Bake another 6 to 8 minutes until golden brown. Immediately press the centers down again. Fill each with about 1/2 teaspoon of preserves. Top with the cheese pieces, pecans, and herbs.

Bake for 3 to 5 minutes until the cheese melts. Serve warm.
