Ingredients

all-purpose flour (dough) 250 g
caster sugar, extra-fine (dough) 75 g
soft butter (dough) 175 g
butter, diced (filling) 90 g
mascarpone (filling) 90 g
sweetened condensed milk (filling) 800 g
dark chocolate (decoration) 90 g
milk chocolate (decoration) 90 g
white chocolate (decoration) 50 g

Instructions

1

Prepare the oven

Preheat the oven to 180°C (th. 6). Line a 33 x 23 cm Swiss roll tin with baking paper and lightly grease.

2

Make the dough

Place the flour and sugar in a bowl, add the butter and rub in with your fingers until the mixture resembles breadcrumbs. Knead into a dough.

3

Bake the base

Press the dough into the prepared tin and flatten the surface with the back of a tablespoon. Prick a few holes across the surface with the tines of a fork. Bake in the oven for 20 minutes, until the dough feels firm and starts to turn golden. Cool in the tin.

4

Make the caramel filling

Place the butter, mascarpone, and sweetened condensed milk in a saucepan. Melt over low heat, stirring. Once it comes to a boil, reduce the heat and stir continuously for 5 to 10 minutes, until the mixture begins to caramelize. Be careful not to let it burn, or the flavor will be ruined. Remove from the heat.

5

Add the filling

Pour the mixture over the base, smooth the surface, and let it cool.

6

Decorate

Melt the three chocolates separately over a bain-marie or in the microwave. Drizzle lines of dark chocolate and milk chocolate over the caramel filling.

7

Create the marble effect

Add a small spoonful of white chocolate and use a fork to drag it across the surface, creating a marble pattern.
