Fondant Icing
Method for heating fondant and adjusting its consistency for use as a glaze
Ingredients
Large block fondant
to taste
Reserved syrup (for adjusting consistency)
to taste
Instructions
1
Heat
Place the fondant blocks into a double boiler and heat over low heat.
2
Adjust Consistency
Add reserved syrup to adjust the fondant to a consistency suitable for glazing. The temperature should not exceed 100°F (38°C), and do not overheat, as this will cause crystals to grow larger and make the icing lose its sheen.
