honey 3 tablespoons
garlic powder 1 teaspoon
smoked paprika 1 teaspoon

mini carrots 8-10 small carrots
asparagus spears 12 spears (or substitute green beans)
olive oil 2 tablespoons

Prepare the chicken

Remove bones from chicken thighs using a sharp knife. Place each thigh between two sheets of plastic wrap and gently pound to an even thickness of about 1/2 inch. This ensures even cooking and makes rolling easier.

Make the marinade

In a small bowl, combine honey, garlic powder, smoked paprika, salt, and pepper. Mix until smooth. The honey should be slightly warm if it is too thick.

Marinate the meat

Rub the honey spice mixture generously over both sides of each flattened chicken thigh. Place in a shallow dish, cover tightly, and refrigerate for 24 hours. This long marinating time is key to developing deep, complex flavor.

Prepare the vegetables

Trim asparagus or green beans to fit the length of the chicken rolls. If using regular carrots instead of mini ones, cut them into thin sticks. Blanch the vegetables briefly in boiling water for 2 minutes, then drain and pat dry.

Preheat oven to 400°F (200°C). Lay a marinated chicken thigh flat, arrange 2-3 asparagus spears and a few carrot sticks along one edge. Roll the meat tightly around the vegetables, securing with kitchen twine or toothpicks.

Place the chicken rolls seam-side down on a baking sheet lined with parchment. Drizzle with olive oil and top with rosemary if using. Bake for 30-35 minutes until the chicken is cooked through and the honey glaze is caramelized. Rest for 5 minutes before slicing.
