Instructions
Determine Technique and Begin Initial Practice
Choose a method that suits your hand movements (such as making a Z-shape or a rotating spread). At first, use thin batter to practice on the pan surface; because thin batter contains more water and evaporates slowly, it is easier to handle.
Practice Spreading Evenly
Do not aim for a round shape or thinness at first; you can spread a long strip first, focusing on laying the batter down evenly.
Practice Spreading Thin
Building on even spreading, get a feel for the force you apply and the angle between the scraper and the pan surface, striving to spread the crepe evenly and thinly.
Practice Spreading Round
With the previous foundations in place, practice spreading the crepe into a round shape, taking care to keep the batter from flowing over the edge of the pan.
Full Jianbing Assembly
Once the technique feels natural, add ingredients such as eggs, sweet bean sauce, scallions, and crispy crackers, and practice making a complete jianbing.
