Scallion Biscuits

Story

These fluffy biscuits get their name from the generous scattering of fresh scallions throughout the dough. The dough comes together quickly and requires just a short resting time before baking.

Ingredients

all-purpose flour 110g (about 3/4 cup)
instant yeast 1 teaspoon
scallions, finely chopped 3 stalks
vegetable oil 1 tablespoon
sugar 1 teaspoon
salt 1/4 teaspoon
warm water 60ml (about 1/4 cup)

Mix the wet ingredients

In a large bowl, combine the warm water, yeast, sugar, and oil. Stir until the yeast begins to foam slightly, about 2 minutes. The sugar helps activate the yeast and creates a better rise.

Add flour and scallions

Add the flour and salt to the wet mixture. Stir until a shaggy dough forms, then fold in the finely chopped scallions. The dough should be soft but not sticky.

Let the dough rest

Cover the bowl with plastic wrap and let it sit at room temperature for 20 minutes. This allows the gluten to relax and the dough to puff up slightly.

Shape and cut

Turn the dough onto a floured surface and roll it out to about 1/4 inch thickness. Use a cookie cutter or knife to cut into desired shapes. Transfer to a lined baking sheet and poke 2-3 small holes in each piece to allow steam to escape.

Bake until golden

Preheat your oven to 150°C (300°F). Bake for 15 minutes, then flip each biscuit carefully. Continue baking for another 12-15 minutes until the bottoms are golden brown and the tops are lightly colored. For air fryer, use 140°C (285°F) for the same time, flipping halfway through.
