Prepare and marinate the fish
Cut the sole fillet into thin strips about 5cm long. Sprinkle with salt and chicken powder, then massage gently to distribute the seasonings evenly. Let it sit for 30 minutes to allow the flavors to meld.
Prepare the orange vessel
Slice the orange horizontally about one-fifth from the top. The top part will serve as a lid. Carefully scoop out the flesh from the larger bottom portion, removing about half of the inner flesh to create a hollow cavity for the fish.
Cut the ham
Cut the ham into thin strips roughly the same size as the fish strips. This adds a savory depth and beautiful color contrast to the dish.
Stuff and bake
Mix the marinated fish strips with the ham pieces. Stuff this mixture tightly into the hollowed orange shell. Drizzle with a little cooking oil. Place the orange lid on top and bake at 180°C (350°F) for 12-15 minutes until the fish is cooked through.
Garnish and serve
Garnish with freshly chopped green onions before serving. The dish can be served directly in the orange shell for a dramatic presentation.
