Prepare and marinate the cod
Cut the cod fillets into strips about 1cm thick. Toss with ginger strips, salt, and cooking wine. Let marinate for 15 minutes to allow the fish to absorb flavor and lose excess moisture.
Season the cod
After marinating, pat the cod strips completely dry with paper towels. Sprinkle evenly with garlic powder and dried thyme, then toss to coat.
Sear the cod
Heat oil in a skillet over medium-high heat. Add the cod strips and sear for about 2 minutes per side until lightly golden but not fully cooked through. Remove and set aside.
Assemble the rolls
Lay a bacon strip flat on a clean surface. Place a slice of cheese on top, then add a cod strip and a sprinkle of green onions. Roll tightly and secure with a toothpick if needed.
Bake until crispy
Preheat oven to 190°C (375°F). Arrange the assembled rolls seam-side down on a baking sheet. Bake for 12-15 minutes until bacon is crispy and cheese has melted completely. Serve warm.
