sweet corn ears 2 large ears
water 4 cups for cooking
water 3 cups for blending

Peel off the husks and remove all the silky threads. Stand each ear upright on a cutting board and slice downward to release all the kernels into a large pot.

Cook the kernels

Pour in enough water to just cover the corn kernels. Bring to a lively boil, then reduce to a gentle simmer. Let cook until the corn is buttery soft, about 15 minutes.

Blend until smooth

Allow the mixture to cool for a few minutes. Transfer the cooked corn and its cooking liquid to a blender. Add fresh water using roughly a 3:4 ratio of corn to liquid—adjust to taste for thicker or thinner consistency.
