Almond Milk Tea
A traditional sweet drink made by simmering sweet almonds with milk until thick, then drizzled with sugared osmanthus for a smooth, delicate finish.
Ingredients
sweet almonds (soaked)
to taste
milk (for blender grinding)
250 g
rock sugar (adjust to taste)
to taste
glutinous rice flour (mix with almond milk)
to taste
water (for cooking rock sugar and almond milk)
100 g
osmanthus sugar syrup (drizzle when serving)

Instructions

Soak the Almonds
Soak the sweet almonds in advance.

Grind the Almonds
Place the soaked sweet almonds with 250 g of milk into a blender and grind finely, repeating several times.

Mix with Glutinous Rice Flour
Stir the almond milk together with the glutinous rice flour until evenly combined.

Cook the Rock Sugar Water
Add 100 g of water and the rock sugar to the pot and cook slowly over medium heat until the rock sugar is completely dissolved.

Simmer the Almond Paste
Pour the almond milk mixture into the pot and cook over low heat, stirring constantly for a few minutes, until it thickens into a paste.

Garnish and Serve
Drizzle a small amount of osmanthus sugar syrup on top when serving.
