Ingredients

Aged greens (Chen Cai) as needed
Salt to taste
Cooking oil as needed
Minced garlic 1 tablespoon
Soy sauce to taste

Prepare ingredients

Gather and clean the aged greens. Have the salt, oil, garlic, and soy sauce ready.

Blanch the greens

Bring a pot of water to a boil. Add a pinch of salt and a splash of oil. Cook the greens in the boiling water for about 5 minutes, then remove and drain.

Make the garlic oil

Heat a tablespoon of oil in a pan. Add the minced garlic and fry over low heat until fragrant and golden.

Finish and serve

Pour soy sauce into the pan with the garlic oil, mix briefly, then drizzle the hot sauce over the blanched greens.
