Story

This delicate floral tea has been enjoyed for centuries in China for its calming properties and subtle sweetness. The combination of chrysanthemum with goji berries creates a beautiful balance of flavor and wellness benefits.

Ingredients

dried chrysanthemum flowers 15-20 flowers
water 6 cups
rock sugar 3 pieces (about 2 tbsp crushed)
dried goji berries 15 berries
coarse salt 1 tsp (for soaking)

Clean the flowers

Sort through the dried chrysanthemum flowers, removing any stems or foreign matter. Place in a bowl and cover with water mixed with the salt. Let them soak for about 15 minutes to draw out any dust or impurities, then drain and rinse thoroughly under clean water.

Bloom the chrysanthemum

Transfer the cleaned flowers to a medium saucepan and add the 6 cups of fresh water. Bring to a boil over medium-high heat, then reduce to a gentle simmer. Let cook for 10 minutes until the flowers have fully opened and released their golden color.

Sweeten and add goji

Add the rock sugar and goji berries to the pot. Continue simmering for another 10 minutes, allowing the sugar to dissolve and the goji berries to plump up and release their deep red color into the tea.

Serve and enjoy

Remove from heat and strain the tea into a pitcher or individual cups. Serve warm for a comforting drink, or let cool and refrigerate for a refreshing chilled tea. The tea can be enjoyed plain or over ice.
