Classic Golden French Fries

Crispy on the outside, fluffy on the inside—these homemade fries are simple to make and far better than store-bought. Perfect as a side dish or snack.

Classic Golden French Fries

Ingredients

russet potatoes 2 large (about 1 lb)
vegetable oil (for deep frying) 3-4 cups
salt to taste
optional: pepper, garlic powder, or parmesan as desired

Prep the potatoes

Peel and cut potatoes into even strips, about 1/3 inch thick. Soak in cold water for 10-15 minutes to remove excess starch, then pat completely dry with a clean towel.

Heat the oil

Pour oil into a deep pot or Dutch oven. Heat over medium-high heat until a deep-fry thermometer reads 350°F (175°C). Alternatively, drop a small piece of potato in—if it sizzles vigorously, the oil is ready.

Fry the first batch

Carefully add half the potato strips to the hot oil. Fry for 2-3 minutes without stirring, then flip and continue frying until they turn pale golden. Remove and let rest for 5 minutes.

Crisp them up

Increase heat to high. Return the partially-fried fries to the oil and cook until deeply golden and crispy, about 3-4 minutes more. Stir occasionally to prevent sticking.

Finish and serve

Use a spider or slotted spoon to remove fries from the oil. Let drain on a paper towel-lined plate for 30 seconds, then season immediately with salt. Serve hot and enjoy!
