Ingredients
Instructions
Crisp the Tofu
Slice the block of firm tofu into thick slabs. Heat a flat-bottomed pan over medium heat with a splash of oil. Fry the tofu slices until they are golden brown and crispy on both sides, then remove them from the pan and set aside.
Sauté Aromatics
In the same pan, add a little more oil if needed. Toss in the minced garlic, ginger, and diced red bell pepper. Stir-fry for a minute or two until the peppers soften and the mixture is fragrant.
Cook Vegetables
Add the green beans (or peas) and corn kernels to the pan. Stir everything together and cook for a few minutes until the vegetables are tender but still retain a bit of crunch.
Combine and Serve
Return the crispy tofu slices to the pan along with the diced green bell pepper. Gently toss to combine all ingredients without breaking the tofu. Season with salt to taste and serve immediately.
