This dish is all about contrast—the tender, sweet prawns against the crispy, cereal crunch. The key is toasting the cereal separately so it stays crisp even after mixing with the shrimp. Look for plain corn flakes or a similar unsweetened cereal for the best results.

Ingredients

large prawns 300g, peeled and deveined
corn flakes or similar plain cereal 1 cup
garlic 3 cloves, minced
butter 3 tablespoons
vegetable oil 2 tablespoons
salt to taste
white pepper a pinch
green onions 2 stalks, sliced

Prep the prawns

Pat the prawns completely dry with paper towels. Season lightly with salt and white pepper. This ensures they sear nicely and absorb flavor.

Toast the cereal

Heat a clean wok or large pan over medium-low heat. Add butter and let it melt and foam. Add the cereal flakes and toast, stirring constantly, until they turn golden and smell wonderfully nutty, about 3-4 minutes. Transfer to a bowl and set aside.

Sear the prawns

Wipe the wok clean and heat vegetable oil over high heat. Add the garlic and stir for 10 seconds until fragrant. Add prawns in a single layer and sear without moving for 1 minute. Flip and cook another 30 seconds until just pink through. Remove from heat immediately to prevent overcooking.

Combine and serve

Add the toasted cereal back to the wok with the prawns. Toss everything together gently so the cereal coats the shrimp. Sprinkle with green onions and serve immediately while the cereal is still crispy.
