Ingredients

Chicken wings 500g
Salt 1 tsp
MSG or chicken powder 1/2 tsp
Cooking oil For deep frying
Purple onion or shallot 1/2 cup, sliced

Prepare the Wings

Place the chicken wings in a bowl. Use a knife to make shallow diagonal cuts (score) on both sides of each wing to help them cook faster and absorb the marinade.

Marinate

Season the wings generously with salt and MSG (or chicken powder). Rub the seasoning into the meat and let them sit for about 15 minutes to absorb the flavors.

Deep Fry

Heat oil in a wok or deep pan until it reaches about 80% of smoking point (approximately 350°F/180°C). Carefully slide the marinated wings into the hot oil. Fry until they turn a golden brown color and are cooked through.

Remove the wings from the oil and drain briefly. Toss them back into the wok with the sliced purple onions. Stir-fry quickly for a minute until the onions are fragrant and slightly wilted, then serve immediately.
