Story

King oyster mushrooms have a hearty texture that holds up beautifully when fried. The key is getting them really dry before cooking—any excess moisture will cause splashing and sogginess. Serve immediately while hot and crispy.

Ingredients

king oyster mushrooms 2 large (~300g)
vegetable oil 1 cup for frying
cornstarch 3 tablespoons
salt 1/2 teaspoon
black pepper 1/4 teaspoon
garlic powder 1/4 teaspoon
five spice powder pinch

Prep the mushrooms

Rinse the mushrooms under cold water and pat completely dry with a clean kitchen towel. Trim off the woody base. Cut the caps into strips about the thickness of your thumb—roughly 1/2 inch wide.

Coat and rest

Place the mushroom strips in a bowl and toss with cornstarch until evenly coated. Let them sit for 5 minutes; this helps the coating stick and draws out any remaining moisture.

Mix the seasoning

Combine salt, pepper, garlic powder, and five spice in a small bowl. Set aside near your stove.

Fry until golden

Heat oil in a deep pan or wok to 350°F (175°C). Working in batches, add mushroom strips and fry 3-4 minutes until golden brown and crispy. Don't overcrowd the pan. Transfer to a paper towel-lined plate.

Season and serve

While the mushrooms are still hot, sprinkle the seasoning mixture over them and toss gently. Serve immediately as a snack or appetizer.
