The accordion effect comes from cutting almost through the cucumber while using the chopsticks as guards. English cucumbers 2 large
sesame oil 1 tablespoon
rice vinegar 1 tablespoon
soy sauce 1 teaspoon
fine sea salt 1/4 teaspoon
cherry tomatoes 2 (for eyes)
carrot strips 2 thin strips (for antennae)
fresh cilantro leaves for garnish

Prepare the cucumber

Wash the cucumbers thoroughly and pat them completely dry. Trim off the stem and blossom ends. Lay each cucumber on a steady cutting board.

Set up the cutting guides

Place two parallel chopsticks or wooden skewers on either side of the cucumber—this acts as a guard to prevent your knife from slicing all the way through. The chopsticks should be positioned about 1/4 inch from the bottom.

Slice the accordion cuts

Using a sharp chef's knife, make evenly-spaced cuts perpendicular to the length of the cucumber. Keep each slice about 1/4 inch thick. Cut only down to the chopsticks, never through them. After completing one side, carefully rotate the cucumber and make matching cuts on the opposite side.

Stretch and shape the caterpillar

Gently grasp the cucumber from both ends and carefully stretch it outward. The cuts will expand into an accordion-like pattern, creating the segmented body of your caterpillar. Arrange it on your serving platter.
