Drunken Edamame with Fermented Grain Liquor

Story

These edamame make an irresistible starter at any gathering. The fermented grain liquor (糟卤) imparts a unique umami richness that elevates simple beans into something special. Serve chilled for best flavor absorption.

Ingredients

fresh edamame in pods 500g (about 1 lb)
fermented grain liquor (糟卤) 120ml (½ cup)
fine salt 1 tsp
water enough for boiling
optional: star anise 1 piece

Prepare the edamame

Rinse the edamame pods under cold water. Trim the stem ends with kitchen scissors or a small knife. Make a small slit along each pod to help the marinade penetrate.

Blanch the pods

Bring a pot of water to a rolling boil. Add the edamame and a pinch of salt. Cook for 5-6 minutes until the pods are bright green and tender but still firm. Drain immediately.

Shock and marinate

Transfer the drained edamame to a bowl of ice water to stop cooking and preserve color. Once cooled, drain again and pat dry. Place in a sealable container, pour the fermented grain liquor over, and toss to coat evenly.

Rest and serve

Cover and refrigerate for at least 2 hours, preferably overnight, allowing the flavors to meld. Stir occasionally if possible. Serve cold as a snack or appetizer, spooning extra marinade over the top.
