Ingredients

ripe pineapple 1 medium (about 4 cups cubed)
fresh mint leaves 1 cup tightly packed, stems removed
honey 2 tablespoons
lime juice 1 tablespoon
pinch of sea salt to taste

Prep the pineapple

Cut the pineapple lengthwise into quarters. Slice off the skin and remove the tough core. Cut the flesh into bite-sized chunks and place in a large bowl.

Prepare the mint

Strip the mint leaves from their stems. Wash thoroughly and pat completely dry with paper towels—any lingering moisture will dilute the dressing.

Make the dressing and toss

Whisk together honey, lime juice, and salt until smooth. Add the mint leaves and gently crush them with the back of a spoon to release their oils. Pour over the pineapple and toss gently to coat. Serve immediately or chill briefly.
