Sour Cream Biscuits & Chicken Salad

A recipe for sour cream biscuits served with homemade chicken salad dressing as a light snack.

Sour Cream Biscuits & Chicken Salad

Ingredients

all-purpose flour 185 g (about 1 1/2 cup)
baking powder 2 tsp
baking soda 1/2 tsp
salt 1/2 tsp
sour cream 1/4 cup
fresh milk 1/2 cup
sugar 1 tbsp
frozen butter 60 g

Step 1

Sift together the all-purpose flour, baking powder, baking soda, and salt.

Cut the frozen butter into small pieces; whisk together the sour cream, fresh milk, and sugar.

Place the flour mixture in a mixing bowl, add the frozen butter, and cut it into fine crumbs using a pastry blender (you may also use your hands or a fork).

Pour the milk mixture into the flour and fold together with a rubber spatula just until a dough forms—work quickly to avoid gluten development. Turn the dough out onto a floured surface and dust the top with a little flour to prevent sticking.

Dust a rolling pin with flour and roll or press the dough to about 1 cm thick (you can also flatten it with your palms, but be sure to flour your hands to prevent sticking).

Use a round cutter to cut out circles about 9 cm in diameter. Arrange them neatly on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C for about 15 minutes.

Serve with chicken salad dressing.
