Ingredients

Beef leg meat (cut into cubes) 500 g
Onion (some shredded, some diced) 50 g
Carrot (sliced) 50 g
Celery (cut into segments) 50 g
Curry powder 15 g
Salt 3 g
Dry red wine 5 g
Soy sauce 5 g
Flour 25 g
Chicken broth 100 g
Oil 50 g
Chili powder a pinch
MSG a pinch
Bay leaf a pinch
Minced garlic a pinch
Peppercorns a pinch
Water (amount not specified)

Braising the Beef

Cut the beef into cubes, sprinkle with salt, and fry in oil until golden. Transfer to a braising pot, add water, dry red wine, soy sauce, shredded onion, sliced carrot, bay leaf, peppercorns, and salt. Braise over low heat for 2-3 hours until the beef is fall-apart tender.

Making the Curry Sauce

Heat oil in a frying pan and briefly sauté the diced onion, celery segments, bay leaf, and minced garlic. Stir in the flour and cook until fragrant, then add the curry powder and cook until aromatic. Finish with a little chili powder to form the curry sauce, then set aside.

Combining and Plating

Pour the chicken broth into the frying pan and bring to a boil. Stir in the curry sauce along with salt and MSG to season evenly, then add the braised beef and let it simmer briefly. Transfer to a serving dish and serve immediately.
