Instructions
Prepare pea starch mixture
Place the pea starch in a basin, add 5 jin (2500 g) of clean water, and stir until evenly dissolved.
Cook the jelly
Place an iron wok over high heat, add 35 jin (17.5 kg) of clean water and bring to a boil. Pour the dissolved pea starch into the wok while stirring continuously with a wooden stick until the pea starch becomes a cooked paste. Remove from heat and ladle into a tray (about 66 cm long by 33 cm wide). Let cool completely, then remove and cut into small cubes about 1 cm square. Store in a basin and soak in cold boiled water.
Prepare sugar syrup
Place an aluminum pot over high heat, add 5 jin (2500 g) of clean water, white sugar, and saccharin. Bring to a boil and dissolve into a sugar syrup. Remove the pot from heat, pour into a bucket and cool, then add fruit syrup, citric acid, and flavoring essence, and stir well.
Assemble the dish
Take one small cup, scoop in cold jelly cubes to fill half the cup, then pour in the fruit sugar water. The dish is ready.
