Grandfather's Chicken
A classic Cantonese dish of braised, tea-smoked chicken with a rich tea aroma.

Initial Preparation
Slaughter the live hen, remove its internal organs and clean thoroughly, blanch briefly in a pot of boiling water, then remove and rinse.
Brine Boiling
Place the hen in a pot of simmering refined brine, boil over high heat for approximately 30 minutes until it is 80% cooked, then remove.
Smoking
Set a wok on the stove, line the inside of the wok with aluminum foil, add the jasmine tea leaves, brown sugar crumbs and rice to the wok, place the hen on a rack inside the wok, cover the wok tightly to seal, heat over high heat until yellow smoke rises for a short period, then remove to obtain the smoked Grandfather's Chicken.
Plating
Cut the chicken into strips and chunks, arrange on a serving plate, garnish with coriander and red bell pepper strips, drizzle with sesame oil, and serve either hot or cold.
