Story

This homemade pork jerky brings the classic Chinese deli favorite to your kitchen. The key is beating the meat until it becomes sticky and cohesive, which creates that satisfying chewy texture. Slice thin for a crispier bite, or keep them chunky for a meatier snack.

Ingredients

Lean ground pork 300g
Light soy sauce 2 tablespoons
Oyster sauce 1 tablespoon
Sugar 1 tablespoon
Sesame oil 1 teaspoon
Ground white pepper 1/2 teaspoon
Cooking wine 1 tablespoon
Honey 2 tablespoons
Sesame seeds 1 tablespoon
Vegetable oil for brushing

Season the meat

Place ground pork in a large bowl. Add soy sauce, oyster sauce, sugar, sesame oil, pepper, and cooking wine. Mix with chopsticks until everything is evenly distributed.

Beat until sticky

Use an electric hand mixer on medium speed to beat the meat mixture for 3-4 minutes until it becomes sticky and pulls away from the sides of the bowl. This texture is essential for the jerky to hold together.

Prepare the baking sheet

Line a large baking sheet with aluminum foil. Brush the foil lightly with vegetable oil to prevent sticking.

Roll out the meat

Transfer the seasoned pork onto the prepared baking sheet. Cover with plastic wrap and use a rolling pin to flatten into a thin, even rectangle about 3-4mm thick.

Apply honey and sesame

Remove the plastic wrap. Brush the surface generously with honey, then sprinkle sesame seeds evenly on top. Press gently so the seeds stick.

Bake until set

Preheat oven to 160°C (320°F). Bake for 15 minutes until the surface looks set. Remove, flip the entire sheet carefully, and bake another 10 minutes until the other side is golden and dry.

Cool and slice

Let the pork cool completely on the baking sheet—it will become firmer as it rests. Cut into bite-sized strips or diamonds to serve.
