Ingredients

Shrimp (remove black vein, wash and pat dry, marinate 20 minutes) 160 g
Small onion (cut into strips) 1
Scallion (cut into segments) 1
Garlic cloves (minced) 2
Eggs (beaten with seasoning) 4
Salt (marinade) 1/3 tsp
White pepper (marinade) a pinch
Sesame oil (marinade) a pinch
Cornstarch (marinade) 1/2 tsp
Egg white (marinade) 1 tbsp
Hot and sour sauce (thickening) 1/4 cup
Water (thickening) 1/2 cup
Sugar (thickening) 1/2 tsp
Cornstarch (thickening) 1/2 tsp
Light soy sauce (thickening) 1 tsp
Oil (used in two batches, 2 tbsp each) 4 tbsp

Instructions

1

Marinate the shrimp

Remove the black vein from the shrimp, then wash and pat dry. Combine with the marinade ingredients and let sit for 20 minutes. Slice the onion into thin strips, cut the scallion into segments, and mince the garlic. In a separate bowl, beat the eggs together with the seasoning.

2

Pan-fry the omelette

Heat 2 tbsp of oil in a pan over medium heat. Pour in the beaten egg and stir-fry until it just begins to set. Switch to medium-low heat and continue cooking until both sides are golden brown. Remove and place on a serving plate.

3

Stir-fry the shrimp and pour the sauce

Heat the remaining 2 tbsp of oil in the pan. Add the marinated shrimp and stir-fry, then toss in the onion, garlic, and scallion and stir until fragrant. Pour in the thickening sauce and bring to a boil. Spoon the shrimp and sauce over the omelette and serve immediately.
