Story

These crispy oven-baked fries are a healthier alternative to deep-fried potatoes. The soak removes excess starch for extra crunch, while fresh parsley adds brightness and color.

Ingredients

large russet potatoes 2 (about 500g)
cornstarch 2 tablespoons
vegetable oil 2 tablespoons
sea salt 1 teaspoon
fresh parsley, chopped 2 tablespoons
black pepper pinch (optional)

Instructions

Prep the potatoes

Peel the potatoes and cut into 10cm (4-inch) strips about 1cm thick. Transfer to a bowl and cover with cold water. Let soak for 1 hour to draw out excess starch—this ensures crispy fries.

Dry thoroughly

Drain the potatoes and pat completely dry with clean kitchen towels. Moisture is the enemy of crispiness, so be thorough.

Season and coat

Preheat your oven to 200°C (400°F). Toss the dried potato sticks with cornstarch until lightly coated. Drizzle with oil, add sea salt, and toss again until evenly distributed.

Bake until golden

Spread the fries in a single layer on a baking sheet—don't crowd them. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy on the outside.

Finish with herbs

Remove from oven and immediately toss with fresh chopped parsley. Serve hot and enjoy!
