Pineapple Crab Sticks

Ingredients

Imitation crab sticks (cut into diamond-shaped pieces) 40 g
Fresh pineapple (washed, cut lengthwise into a cup shape, flesh removed and sliced, soaked in light salt water) 1
Salt (for seasoning) 4 g
Shaoxing wine (for seasoning) 15 g
MSG (for seasoning) 2 g
Starch (for coating, frying, and thickening) 15 g
Raw oil (for frying and stir-frying) 25 g
Ginger flower (sliced, for aroma) 5 g
Scallion segments (for aroma) 10 g

Instructions

Prepare the pineapple

Wash the pineapple, cut it lengthwise into a cup shape, remove the flesh and slice it, then soak the slices in light salt water for later use.

Prepare and fry the crab sticks

Cut the crab sticks into diamond-shaped pieces, coat them with starch, and flash-fry them in oil heated to medium-hot, then remove and drain.

Stir-fry and thicken

Leave a little oil in the wok, add the scallion segments and ginger flower to release their aroma, then add the crab sticks and pineapple flesh. Season with salt, Shaoxing wine, and MSG, and stir-fry until evenly combined. Thicken with a wet starch slurry, drizzle with finishing oil, and serve everything inside the pineapple cup.
