These tender peanuts make an irresistible snack or side dish. The preserved plums melt into the cooking liquid, creating a sweet-sour glaze that clings to each peanut. Perfect served warm or at room temperature.

Ingredients

raw peanuts in shells 300g
preserved plums (huaimei) 8-10 pieces
rock sugar 3 tablespoons
water 500ml

Prepare the peanuts

Rinse the peanuts thoroughly under cold running water. Pick out any debris or damaged nuts. Set aside.

Combine all ingredients

Add the washed peanuts, preserved plums, rock sugar, and water to a heavy-bottomed pot. Stir gently to distribute the sugar evenly.

Simmer until tender

Bring the mixture to a boil over medium-high heat, then reduce to low. Cover and let simmer for about 40-45 minutes, stirring occasionally, until peanuts are soft and the liquid has reduced to a glossy syrup.

Rest and serve

Remove from heat and let stand for 10 minutes. Serve warm or spread on a plate to cool to room temperature. The flavors continue to develop as it sits.
