These playful rainbow buns are a modern twist on classic Chinese mantou. Using natural fruit and vegetable powders creates gorgeous layers without any artificial colors. Kids absolutely love them, and they're a wonderful way to get little ones excited about helping in the kitchen.

Mix the dough
Combine flour, yeast, sugar, and warm milk in a bowl or bread machine. Knead for about 8 minutes until smooth and elastic. The dough should feel soft but not sticky. Let it rest for 10 minutes covered with a damp towel.
Color the portions
Divide the rested dough into 4 equal pieces. Work each piece separately, mixing in a different colored powder until the color is evenly distributed throughout. Add a tiny splash of water if the dough feels too dry while mixing.
Roll out the layers
Take each colored dough piece and roll it into a thin circle about 3mm thick on a lightly floured surface. Try to keep the circles roughly the same size for even layering.
Stack and roll
Stack the colored circles on top of each other in rainbow order—red, yellow, green, blue. Press down gently to help them stick together, then roll the entire stack tightly into a log shape.
Shape and cut
Cut the rolled log into 6 equal pieces. With each piece, gently pull the outer edges toward the center and pinch to seal, creating a rounded bun shape with the colorful swirl visible on top.
Steam until fluffy
Place the shaped buns on parchment-lined steamer baskets, leaving space between each for rising. Steam over boiling water for 15-18 minutes. Turn off the heat and let them rest in the covered steamer for 2 minutes before serving.
