Peel the pumpkin, remove the seeds, and wash the flesh. Cut it into evenly sized bite-sized cubes. Keep the garlic cloves unpeeled but wash them thoroughly.

Place the pumpkin cubes and garlic cloves in a mixing bowl. Drizzle with olive oil and sprinkle generously with salt and black pepper. Toss everything well to ensure the pieces are evenly coated.
