Dried Blood Bird's Nest 6g for 2 servings
Snow Pear 2 pieces
Rock Sugar 2 pieces

Instructions

Step 1

Weigh the required amount of bird's nest first. Soak the dried bird's nest in purified water for 4 to 8 hours, then place it in a well-ventilated area, and monitor its expansion degree closely. Once the bird's nest becomes soft and fully expanded, use fine tweezers to gently pluck out the floating fine feathers. After finishing plucking all the feathers, rinse the bird's nest with purified water 1 to 2 times. Once clean, carefully tear the bird's nest into thin strips following its natural texture, and make sure to crush the hard bird's nest head thoroughly with your fingers.

Wash the snow pear clean, cut a 2cm horizontal slice near the stem end, then use a melon baller to scoop out all the inner pulp to make a snow pear cup.

Use a small knife to cut small inverted triangles at intervals along the edge of the snow pear cup to get a beautiful finished edge. Do not throw away the small snow pear pieces cut out, as they can be added to the stew to add natural sweetness.

Pour the prepared bird's nest into the stewing jar, add purified water to fully submerge the bird's nest, and add one piece of rock sugar for seasoning.

Place the cut snow pear stem end on top of the snow pear cup to cover it, which is to prevent condensed steam from the steamer from dripping into the bird's nest during the steaming process and affecting the flavor. Bring the water in the steamer to a boil, then place the covered bird's nest snow pear cup into the steamer. Simmer over low heat in a double boiler for 1 to 2 hours.

The standard for a fully cooked bird's nest is that its surface shows a small amount of foam and has a very thick, sticky texture. When eating, you can consume the snow pear along with the bird's nest.
