granulated sugar 1/2 cup
salt 1/2 teaspoon
raisins 1 cup, plus more for topping
milk 1 cup
vegetable oil 1/3 cup
large eggs 2

Instructions

Prepare the oven and pan

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners and set aside.

Mix the dry ingredients

In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined. Add the raisins and toss until they are evenly distributed throughout the flour mixture.

Combine the wet ingredients

In a separate bowl or large measuring cup, whisk together the milk, vegetable oil, and eggs until the mixture is smooth and fully combined.

Bring it all together

Pour the wet ingredients into the bowl with the flour mixture. Use a spatula to fold everything together with gentle, sweeping motions. Stop as soon as no dry flour remains—the batter should still look a bit lumpy. Overmixing will make the muffins tough.

Fill and top the cups

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Press a few extra raisins onto the tops of each muffin for a beautiful finish.

Bake for 20 to 25 minutes, until the tops are golden and a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack. Best served warm.
