Prep the Vegetables
Rinse the snow peas thoroughly and pinch off the stem ends, pulling away any tough strings along the seams.
Blanch the Peas
Bring a pot of water to a rolling boil and add a pinch of salt. Drop the snow peas in and cook for about 1 to 2 minutes until they turn bright green but remain crisp.
Shock and Toss
Drain the peas immediately and plunge them into a bowl of ice water to stop the cooking process. Once cooled, drain well and toss generously with the XO sauce until evenly coated. Serve immediately.
