Prep the Shrimp
Rinse the shrimp thoroughly under cold water. Using a small knife or a skewer, devein the shrimp by removing the dark intestinal tract along the back. Leave the shells on for better flavor retention during steaming.
Arrange and Season
Lay the cleaned shrimp in a single layer on a heatproof plate that fits inside your steamer. Top the shrimp with the ginger slices and julienned scallions. Drizzle the cooking wine evenly over the top.
Steam Until Cooked
Bring water in your steamer to a rolling boil. Place the plate of shrimp into the steamer basket. Cover tightly and steam for about 5 to 8 minutes, or just until the shrimp turn opaque and pink. Serve immediately while hot.
