Stir-fried Chives with Snail Meat

Ingredients

Chives, washed and cut into 3 cm long segments 300 g
Cooked snail meat, shells and intestines fully removed, washed and drained 250 g
Cooked lard, divided into two portions 50 g
Shaoxing wine 5 g
Refined salt 8 g
MSG 1 g
Ground white pepper 2 g

Prep

Remove all shells and intestines from the snail meat, wash thoroughly and drain. Wash the chives and cut into 3 cm long segments.

Cook snail meat

Heat a wok over high heat, add half of the cooked lard and heat to 60% heat, add the snail meat and stir-fry quickly, pour in the Shaoxing wine, then transfer to a plate.

Assemble the dish

Return the wok to the heat, add the remaining cooked lard and heat to 80% heat, add the chives, refined salt and MSG, stir-fry quickly until tender, add the snail meat and toss to combine.
