Season the pork
Slice the pork tenderloin thinly against the grain into matchstick-sized strips. In a bowl, combine the pork with light soy sauce, dark soy sauce, sugar, salt, and white pepper. Toss well to coat evenly. Let it marinate for 10 minutes while you prep the other ingredients.
Heat the wok
