Sweet and Sour Pork Ribs

Ingredients

small pork ribs with meat (cut into strips along the rib seam, then chopped into sections) 600 g
sesame oil 60 g
brown sugar 100 g
vinegar 250 g
soy sauce 2 tbsp
fine salt 2 tbsp
cooking wine 2 tsp
red yeast rice water 2 tsp
scallion (split lengthwise and cut into sections) to taste
ginger (cut into slices) to taste
water to taste

Instructions

1

Step 1

Cut the pork ribs into strips along the rib seam, then chop into sections; split the scallion lengthwise and cut into sections; cut the ginger into slices.

2

Step 2

Place the ribs in a bowl, add soy sauce, fine salt, cooking wine, scallion, and ginger, mix well, and marinate for 2 hours.

3

Step 3

Place a wok over heat, pour in peanut oil and heat until hot. Remove the scallion and ginger from the ribs, drain off the excess marinade, and add the ribs to the wok in batches. Fry until golden red, then remove and drain the oil.

Step 4

Return the wok to the heat, pour in sesame oil, add scallion and ginger and stir-fry for a few times. Add the ribs, then pour in water, brown sugar, vinegar, cooking wine, and red yeast rice water. Bring to a boil, skim off any foam, then simmer over low heat until the meat is tender enough to fall off the bone. Finally, reduce the sauce until thickened.

Step 5

When serving, remove the scallion and ginger, toss the ribs with the sauce evenly, and transfer to a serving dish.
