Ingredients

coconut oil or butter 30g
large egg 1
erythritol or keto sweetener 2 tablespoons
almond flour 3 tablespoons
psyllium husk powder 1 teaspoon
baking powder 1/2 teaspoon

Instructions

Melt the fat

Place coconut oil in a microwave-safe ramekin or mug. Microwave on high for 20-30 seconds until completely melted.

Add the egg and erythritol to the melted oil. Whisk until smooth and well combined.

Stir in almond flour, psyllium husk powder, and baking powder. Mix until you get a smooth batter with no lumps.
