Abalone and Bamboo Shoot Soup

Ingredients

Canned abalone (sliced thinly) 50 g
Bamboo shoots (soaked in warm water until soft, washed clean of grit, cut into strips) 15 g
Pea shoots (washed) 50 g
Cooking wine to taste
Fine salt to taste
MSG to taste
White pepper to taste
Stock to taste

Step 1

Place the bamboo shoots in a bowl and soak them in warm water until soft. Gently rub and wash them several times to remove any grit, then cut them into strips. Blanch briefly in a pot of boiling water and transfer to cold water. Slice the canned abalone into thin pieces. Wash the pea shoots.

Step 2

Pour the stock into a pot and bring it to a boil. Briefly blanch the bamboo shoots and abalone slices separately in the boiling stock, then transfer them into a soup tureen. Skim the foam from the surface of the broth, then season with fine salt, MSG, cooking wine, and white pepper.
